The New World Tavern Chosen to Compete in HopChef

Plymouth’s destination culinary/craft beer establishment, The New World Tavern (NWT), has been nominated to compete in Brewery Ommegang’s HopChef competition, a nationally acclaimed contest pitting the most prestigious culinary chefs from across the nation against the top competitors in their field.  NWT’s Chef Johnny Sheehan, amongst a selection of only 6 chefs from esteemed New England restaurants, are challenged against culinary peers to showcase their imaginative pairing skills, incorporating Brewery Ommegang’s Belgian-style ales, to create a signature pairing dish.  HopChef’s regional competition take place May 21, at Cyclorama at The Boston Center for the Arts, Boston.  The national level of the competition is scheduled for August.

Now held in 8 cities through the United States, the Hop Chef competition selects innovative chefs to prepare and pair dishes with fine Ommegang ales.  Each chef creates a signature dish showcasing their imaginative beer and food pairing skills.  The dishes, along with Ommegang ale pairings, are served to professional judges and a consumer audience.  The Hop Chef Competition is part of the Ommegang initiative Great Beer Deserves Great Food®, a national program dedicated to the concept that fine beer deserves its rightful place at the table with fine foods.

As the May regional competition approaches, Chef Sheehan will offer a test menu at NWT of his Ommegang ale-inspired dish contenders for patrons.  Sheehan’s creative and innovative menus often incorporate brews from around the world into his globally-inspired recipes.

First inspired by cooking in his home kitchen as a youth, Sheehan took his first job in the restaurant industry washing dishes at age 14.  As a young adult, he peered into the Boston restaurant scene making deliveries as a tractor trailer driver, reigniting his passion for cooking.  His courageously made a pivotal turn in his career, enrolling in the acclaimed Le Cordon Bleu culinary school in Cambridge, where he eagerly earned a degree, alongside life-altering experiences that support his culinary approach to this day.  “The instructors saw my passion, and took my learning to a different level, teaching in open Asian markets about raw ingredients, or about cooking sciences that are often found in high-end restaurants, investing hours in my education past the school day.”

Sheehan went on to work under celebrated Chef Ken Oringer at Boston’s renowned French modern-American restaurant Clio, where he embraced everything from the simplest tasks of selecting fresh garden herbs through an accelerated  lifetime of culinary craftsmanship at his right hand, on to run Clio’s notable sushi bar, Uni.  His passion for cooking and a unique take on Asian-inspired cuisine is immediately evident upon speaking with him.  “I want to inspire the Plymouth community towards a culinary destination, with worldly flavors, advanced techniques, to expecting a higher level of cuisine,” says Sheehan, “Now people have grown accustomed to The New World’s Tavern’s interpretation of a tavern menu, and appreciate it.  Our clientele will try almost every innovative dish we offer and have faith in it.  They’ll come in one week and order a burger or some wings, and on their next visit, set off on an adventure by experimenting with a duck or bone marrow entrée.”

The New World Tavern was also recently featured on an episode of Boston’s popular television program The Phantom Gourmet, and received the rare and coveted “Hidden Jewel” rating for their exceptional fare.
